Tongseng daging
Bahan-bahan
- 500 gr daging (bisa sapi, kambing atau ayam)
- 500 ml santan (saya pakai 1/2 kotak santan Kara)
- 2 buah tomat potong2
- 5 lembar dun kol potong kasar
- 1 batang daun bawang potong serong
- secukupnya Garam, gula, kaldu jamur, kecap manis
- Jeruk limau
- Secukupnnya tomat
Bumbu cemplung :
- 4 daun jeruk, buang tulang daunnya
- 2 lembar daun salam
- 2 buah sereh keprek
- 3 butir kapulaga, 2 butir cengkeh, 1 cm kayumanis
- Secukupnya cabe rawit (utuh / iris) sesuai selera
Bumbu halus :
- 7 siung bawang merah
- 4 siung bawang putih
- 1 sdm ketumbar,
- 1 cm kunyit,
- 1 sdm merica butiran (sangrai dulu)
- 2 buah cabe merah besar
Langkah:
- Tumis bumbu halus dan bumbu cemplung dengan api sedang sampai harum,
- Masukkan daging.
- Tambah air 1 liter, rebus sampai daging empuk.
- Setelah daging empuk, masukkan santan,
- Beri gula, garam, kaldu jamur, 2 sdm kecap manis.
- Koreksi rasa
- Jika sudah pas, masukkan tomat, daun bawang dan kol Masak lagi selama semenit.
- Matikan api.
- Sajikan dengan taburan bawang goreng dan kucuran jeruk limau.
