Resep Tradisional Rujak Cingur Mantap
Bahan-bahan
- Cingur - 250 gram
- Tauge - 50 gram
- Kangkung - 2 ikat
- Mentimun - 1 buah
- Bengkuang - 1 buah
- Tempe - 1/2 papan
- Tahu - 2 buah
Bumbu Rujak:
- Cabai rawit (optional) - 8 buah
- Kacang tanah goreng - 3 sdm
- Petis udang - 2 sdm
- Bawang putih goreng - 2 siung
- Air asam jawa - 4 sdm
- Gula merah, iris - 2 sdm
- Garam - 1/4 sdt
- Pisang klutuk / batu, parut kasar - 2 buah
- Air matang - secukupnya
Pelengkap:
- Lontong - secukupnya
- Kerupuk - secukupnya
- Bawang putih goreng - secukupnya
Langkah
Cara Membuat Cingur
- Rebus cingur sampai empuk, tiriskan, kemudian potong-potong.
- Petik-petik daun kangkung lalu rebus sampai matang.
- Rendam tauge dengan air panas, tiriskan.
- Potong tipis mentimun dan bengkuang, sisihkan.
- Goreng tempe dan tahu sampai matang, kemudian potong-potong.
Cara Membuat Bumbu Rujak
- Haluskan cabai rawit, kacang tanah, bawang putih, gula merah, garam, dan pisang klutuk.
- Tambahkan petis udang, air asam jawa dan air secukupnya, aduk rata.
- Tata sayuran, cingur, tahu dan tempe goreng di piring
- Siram dengan bumbu rujak.
- Sajikan dengan lontong, kerupuk serta bawang putih goreng.
