Resep Sederhana Kepiting Kari Endes
Bahan-bahan
- 500 gram kepiting
- 750 ml santan (dari 1 butir kelapa)
- 6 buah cabe merah keriting
- 12 siung bawang merah
- 8 siung bawang putih
- 4 sdt ketumbar (sangrai)
- 9 butir kemiri (sangrai)
- 5 cm kunyit (dibakar)
- 3 sdt jintan
- 1 sdt merica
Bumbu lainnya:
- 3 batang serai
- 5 cm laos
- 3 cm jahe (dibakar)
- 4 lembar daun jeruk
- 6 lembar daun koja/ daun salam
- 4 buah cabe merah keriting (potong serong)
- 4 cm kayu manis
- 1 sdm air jeruk nipis
Langkah
- Didihkan air, kemudian siram kepiting diatas air mendidih. Cara ini digunakan untuk mematikan kepiting. Lalu sikat kulit kepiting sampai bersih.
- catatan: belilah kepiting yg masih hidup dan segar
- Didihkan air kembali, masukkan kepiting yg tadinya disiram air ke dalam air yang mendidih. Rebus selama 5-7 menit. jangan terlalu lama merebus krn nanti kepiting akan direbus kembali dalam kuah santan
- Haluskan bahan-bahan, lalu tumis sampai harum. Jika tumisan sudah benar2 harum, masukkan bumbu bumbu lainnya sampai daun rempah layu. Tambah sedikit air
- Masukkan kepiting, biarkan bumbu meresap. Masukkan santan perlahan lahan. Biarkan santan mendidih. Jangan terlalu lama mendidihkan agar daging kepiting tetap juicy
- Tambahkan gula dan garam sesuai selera, hidangkan.
