Bahan-bahan
- 1/2 kg Ceker Ayam
- Es Batu
Bumbu Halus :
- 15 pcs Cabe Rawit Merah
- 4 Siung Bawang Putih
- 3 Siung Bawang Merah
- Sedikit Jahe
- 1 lmbr Daun Salam
- Seruas lengkuas digeprek
- garam
- gula
- 4 sdm Saus Sambal
- 2 sdm Saus Tomat
- minyak goreng untuk menumis
- air
Langkah
- Rebus Ceker sampai empuk dengan air yg ditambahkan 2sdm garam. Tiriskan, Lalu siram ceker dengan air. Siapkan wadah, rendam ceker dengan es batu dan air. Simpan di kulkas selama kurang lebih 4 Jam. Siapkan gunting, gunting kulit dari ujung ceker sampai bagian tengah ceker dan keluarkan tulangnya.
- Tumis bumbu halus beserta daun salam dan lengkoas sampai harum.
- Tambahkan sedikit air, lalu masukan saos sambal dan tomat. Masukan garam dan gula. Koreksi Rasa.
- Masukan Ceker tanpa tulangnya, masak sampai kuah mengering.
