Bahan-bahan
- 2 buah tahu putih, goreng setengah matang
- 150 gram taoge
- 250 gram mi kuning basah
- 50 gram soun/suun, siram air panas, tiriskan
- 2 buah mentimun, potong dadu
- 4 buah pempek lenjer, siap pakai, goreng
- 30 gram ebi kering, sangrai, tumbuk halus
Bahan kuah cuko :
- secukupnya cabai rawit haluskan
- secukupnya cabai merah haluskan
- 5 siung bawang putih haluskan
- 1000 ml air
- 250 gram gula aren
- secukupnya garam
- secukupnya asam jawa
Bahan pelengkap :
- Kerupuk merah goreng
- 30 gram ebi, sangrai, tumbuk halus
- Timun cacah
Langkah
- Cara Membuat Kuah Rujak Tahu : Jerang air, gula jawa, dan gula pasir hingga gula larut. Angkat, saring. Masukkan bumbu halus dan garam, aduk rata, jerang kembali hingga mendidih. Angkat, biarkan hangat, tambahkan cuka, aduk rata. Sisihkan.
- Goreng tahu hingga setengah matang. Potong-potong kotak. Sisihkan.
- Potong-potong pempek tebal 1 cm.
- Cara Penyajian Rujak Tahu : Dalam piring saji, atur potongan tahu, taoge, mi, soun, timun, dan potongan pempek. Siram kuah, taburi ebi, dan kerupuk.
- siap di sajikan.
