Bahan-bahan
- Daging kambing - 500 gram
- Daun kol, iris kasar - 1/4 potong
- Tomat muda, potong sesuai selera - 3 buah
- Daun bawang, iris - 1 batang
- Kecap manis - 2 sdm
- Cabe rawit utuh - 8 buah
- Daun salam - 1 lembar
- Daun jeruk - 3 lembar
- Serai, memarkan - 1 batang
- Jahe, memarkan - 1 ruas jari
- Air - 1 liter
Bumbu Halus:
- Bawang merah - 4 siung
- Bawang putih - 3 siung
- Kemiri - 3 butir
- Cabai merah - 3 buah
- Ketumbar - 1 sdt
- Pala - 1/2 ruas jari
- Gula - 1 sdt
- Garam - 1.5 sdt
- Merica - 1/4 sdt
Langkah
- Rebus daging dengan daun salam dan serai lalu buang airnya. Potong-potong daging jadi ukuran kecil.
- Tumis bumbu halus, daun salam, daun jeruk, serai, dan jahe hingga harum.
- Masukkan daging. Tuang air lalu aduk rata.
- Tambahkan kecap, gula, garam, dan merica. Masak sampai air mulai berkurang dan bumbu meresap.
- Masukkan daun kol dan daun bawang. Aduk rata.
- Bila daun kol sudah terlihat layu, masukkan tomat. Aduk sebentar lalu matikan apinya. Angkat.
- Siap disajikan.
Tips
- Buang air rebusan pertama daging kambing untuk menghilangkan baunya.
- Saat memasak daging, gunakan api kecil agar bumbu lebih meresap.
