Bahan-bahan
- Ayam, dipotong 10 bagian - 1 kg
- Santan kental dari 1 butir kelapa - 300 ml
- Santan encer (dari kelapa di atas) - 700 ml
- Daun jeruk, dibuang tulang daunnya - 5 lembar
- Daun salam - 3 lembar
- Serai, diambil putihnya, memarkan - 2 batang
- Lengkuas, memarkan - 3 cm
- Garam - 2.5 sdt
- Merica bubuk - 1/4 sdt
- Gula pasir - 1/2 sdt
- Minyak untuk menumis - 2 sdm
Bumbu Halus:
- Bawang merah - 10 siung
- Bawang putih - 4 siung
- Ketumbar sangrai - 2 sdt
- Jahe - 2 cm
- Jinten sangrai - 1/4 sdt
Taburan:
- Bawang merah goreng - secukupnya
Langkah
- Panaskan minyak. Tumis bumbu halus, daun jeruk, daun salam, lengkuas dan serai sampai harum. Masukkan ayam. Aduk rata hingga ayam berubah warna.
- Tambahkan garam, merica, dan gula pasir. Aduk rata. Tuang santan encer, masak hingga mendidih dan ayam matang.
- Masukkan santan kental, aduk-aduk hingga santan mendidih, koreksi rasanya.
- Masak sampai matang dan mengental. Sajikan dengan taburan bawang merah goreng.
