BAHAN :
- 900 gram atau 1-2 ekorikan tongkol, dibuang sisik dan isi perutnya
- 1000 cc air
- 1 sdm jeruk nipis
- 26 gram atau dua batang serai memarkan
- 4 gram atau empat lembar daun jeruk purut
- 6 gram atau 1 lembar daun kunyit, dibuat simpul
- 2 gram atau dua potong asam kadis
BUMBU DIHALUSKAN :
- 150 gram cabai keriting merah
- 100 gram atau 10 butir bawang merah
- 8 gram atau 4 siung bawang putih
- 14 gram atau 1-2 cm jahe
- 40 gram atau 3 cm lengkuas, memarkan
- 2 sdt garam
CARA MEMASAK TONGKOL ASAM PADEH :
- Ikan potong melintang/steak selebar 1,5 cm, lumuri dengan air jeruk, diamkan 15-20 menit.
- Masak air sampai mendidih berikut bumbu halus, serai daun jeruk perut dan daun kunyit. Setelah mendidih masukkan ikan, susun hingga semua ikan terendam dalam kuah cabai cabe merah.
- Masak dengan api kecil. hingga air sedikit menyusut, kuah agak mengental. Masukkan asam kandis dan garam, aduk sebentar, angkat.
- sajikan.
