Bahan
- 1 lembar konbu
- 2.000 ml air
- 30 g bonito flakes
- 150 g white miso
- 2 sdm mirin
- 3 sdm wakame
- 60 g jamur enoki, potong bonggolnya
- 50 g jamur shiitake, buang batangnya, iris tipis
- 100 g tahu putih, iris dadu 2 cm
- 1 batang daun bawang
Cara memasak:
- Campur konbu dan air di dalam panci, jerang di atas api, masak hinggai hampir mendidih. Keluarkan konbu dari panci, teruskan memasak air hingga mendidih.
- Masukkan bonito flakes, jangan diaduk, biarkan bonito tenggelam ke dasar panci, angkat, saring kaldunya.
- Masukkan kaldu ke dalam panci kembali, masukkan miso, aduk-aduk hingga tercampur rata. Tambahkan mirin, didihkan.
- Masukkan wakame, jamur enoki, jamur shiitake, dan tahu. Masak sebentar hingga semua matang, angkat.
- Pindahkan sup ke dalam mangkuk saji, taburi daun bawang. Hidangkan selagi hangat.
