Ikan belanak bumbu rujak



Bahan:
  • 4 ekor belanak ukuran sedang, bersihkan, goreng tdk terlalu kering
  • Bumbu halus:
  • 5 siung bawang merah
  • 2 siung bawang putih
  • 2 buah lombok merah
  • 2 buah kemiri
  • 1 sdt ketumbar bubuk
  • 1/2 sdt merica bubuk
  • 2 cm kunyit
  • 2 cm jahe
  • garam
  • daun jeruk, sereh, daun salam, lengkuas, tomat, asam jawa, gula pasir
  • 200 ml air
  • 200 ml santan yg sedang kentalnya
  • sesukanya daun kemangi


langkah

  1. Tumis bumbu halus hingga harum. Tambahkan air, aduk rata
  2. Masukkan daun jeruk, sereh, daun salam, lengkuas, irisan tomat, asam jawa. Tambahkan sedikit gula pasir. Masak hingga mendidih
  3. Tuang santan, masak dg api sedang sambil sesekali diaduk. Koreksi rasa. Masak hg mendidih. Kecilkan api
  4. Masukkan ikan belanak goreng. Tdk usah diaduk2. Cukup dibalik ikannya satu atau dua kali. Masak hg kuah agak menyusut
  5. Matikan api. Tambahkan daun kemangi sebelum dihidangkan
