Bahan:
- 4 ekor belanak ukuran sedang, bersihkan, goreng tdk terlalu kering
- Bumbu halus:
- 5 siung bawang merah
- 2 siung bawang putih
- 2 buah lombok merah
- 2 buah kemiri
- 1 sdt ketumbar bubuk
- 1/2 sdt merica bubuk
- 2 cm kunyit
- 2 cm jahe
- garam
- daun jeruk, sereh, daun salam, lengkuas, tomat, asam jawa, gula pasir
- 200 ml air
- 200 ml santan yg sedang kentalnya
- sesukanya daun kemangi
langkah
- Tumis bumbu halus hingga harum. Tambahkan air, aduk rata
- Masukkan daun jeruk, sereh, daun salam, lengkuas, irisan tomat, asam jawa. Tambahkan sedikit gula pasir. Masak hingga mendidih
- Tuang santan, masak dg api sedang sambil sesekali diaduk. Koreksi rasa. Masak hg mendidih. Kecilkan api
- Masukkan ikan belanak goreng. Tdk usah diaduk2. Cukup dibalik ikannya satu atau dua kali. Masak hg kuah agak menyusut
- Matikan api. Tambahkan daun kemangi sebelum dihidangkan
