Dendeng Kelem

Bahan-bahan

  • 10 porsi
  • 1 kg Daging sapi
  • 5 lembar daun jeruk
  • 5 cm lengkuas
  • 2 sendok makan gula jawa
  • 4 sendok makan Garam
  • 65 ml Santan
  • 1 sendok makan Air asam jawa
  • 2 lembar Daun salam
  • 2000 ml Air

Bumbu yg dihaluskan

  • 12 siung Bawang merah
  • 5 siung Bawang putih
  • 3 cm Jahe
  • 5 butir Kemiri
  • 1 1/2 sendok teh Ketumbar
  • 1 sendok teh Merica
  • 1/2 sendok teh Jinten

Langkah


  1. Panaskan 2 sdm minyak goreng lalu tumis bumbu halusnya, tambahkan, salam, daun jeruk dan lengkuas, masak hingga aroma langunya hilang, tambahkan daging serta gula merah dan garam, aduk rata.
  2. Jika daging sdh berubah warna tambahkan air, masak hingga daging empuk kuah menyusut, masukkan santan, dan air asam jawa.Masak kembali hingga kuah mengental dan agak berminyak. 
  3. Koreksi rasa. Sajikan dgn taburan bawangmerah goreng. (Note : 1 sdm kecap bisa kita tambahkan utk mendapatkan efek warna kecoklatan, bumbu bisa ditumis atau langsung versi ungkep/bacem)
