Bahan:
Bumbu halus:
Cara membuat:
- 1 ekor ayam dipotong men jadi 6-8 bagian
- 500 ml santan kekentalan sedang
- 1 batang serai digeprek
- 1 keping gula merah
- garam secukupnya
- kaldu bubuk secukupnya (opsional)
- minyak goreng secukupnya
Bumbu halus:
- 10 buah cabai rawit merah (sesuai selera)
- 8 siung bawang merah
- 5 lembar daun jeruk
- 4 siung bawang putih
- 3 lembar daun salam
- 3 butir kemiri sangrai
- 2 sendok makan air asam Jawa
- 2 cm kunyit
- 1 ruas jari jahe
Cara membuat:
- Cuci bersih ayam, lalu tusuk-tusuk badan ayam dengan garpu, kemudian lumuri air perasan jeruk nipis dan garam. Diamkan ayam sampai marinasi meresap.
- Tumis bumbu halus dengan minyak panas hingga harum, kemudian masukkan daun salam, daun jeruk, dan serai. Tumis hingga bumbu haram.
- Tuangi santan, bumbui dengan gula, garam, kaldu bubuk (opsional) dan air asam Jawa. Aduk hingga mendidih, kemudian masukkan ayam. Ungkep hingga ayam empuk dan air menyusut.
- Panaskan alat pemanggang, kemudian olesi dengan minyak goreng. Panggang ayam sambil sesekali diolesi sisa bumbu ungkep.
